Like all Les Délices et Gourmandises’ products, our moist, buttery diet sponge cakes are elaborated following the traditional recipe and using fresh, healthy ingredients. The flavor and texture you will get is beyond compare and will for sure delight your taste buds with no risk for your health or your weight!

 

For 8 servings, you will need:

– 3 eggs

– 1 pinch of salt

– ½ c sugar

– ½ c corn starch

– 2 tsp flour

– 1 tsp baking powder

– 1 teaspoon vanilla extract

 

Preparation

– Preheat oven to 350°F.

– Butter the bottom and sides of two 9-inch round cake pans; line the bottoms with parchment paper.

– Separate eggs. Whisk eggs in a mixing bowl, then whisk in salt until stiff.

– Add sugar gradually, then whisk in vanilla. Beat until lighter in color and very light and fluffy in texture, about 3 minutes in a stand mixer or 5 minutes with a hand mixer.

– Add egg yolks. Beat until well blended.

– Sift together cornstarch, flour and baking powder and fold into the mixture.

– Pour into two 20cm (8 inch) greased and lined cake tins.

– Bake for 15-20 min or until golden and firm when lightly touched in the center.

– Immediately turn the layers over so they cool with the paper on the bottom.

– Let cool in the pans on a wire racks for 10 minutes.

– Run a sharp paring knife around the layers to loosen, then invert the pans onto the racks. Let cool completely.
