Enjoy coconut crowns with the smooth traditional taste

For 8 people, you will need:
– 4 eggs
– 200 grams of sugar
– 1 sachet of vanilla sugar
– 100 grams of flour
– 100 grams of potato flour
– 1 teaspoon of baking powder
– 125 grams of shredded coconut 30g + for decor
– 2 tablespoons dark rum
– 200 grams of butter
– 3 tablespoons of jam + 2 tablespoons water

Crown preparation:

– Beat the egg with an electric mixer. Then, while continuing to beat, add the sugar and vanilla sugar gradually.
– Mix separately the flour, the potato flour and the baking powder and add the second mixture in batches to the egg/sugar preparation.
– Add 125 grams of shredded coconut and add it to the paste with rum.
– Melt the butter and while it’s hot, add to the mixture.
– Grease and flour a savarin mould and pour the mixture in it.
– Preheat oven to 170 ° and bake crowns for about 50 minutes.

– Mix the jam with 2 tablespoons of water soup.
– Cover the cake with jam right out of the oven and sprinkle with shredded coconut.
